CHICKEN PESTO PASTA

This dish is delicious, and easy to make it is perfect for a weekday dinner for your family and kids and 
great for dinner parties! You can prepare a big bowl of it and can keep it in the fridge, to serve warm or 
cold. Another great thing is, this dish always looks like its taken hours to make and could be difficult 
but in reality it only took me 20mins!

 [ I N G R E D I E N T S ]

2  x Fresh Organic Breast Fillets ( sliced into small pieces)
3/4 Packet of Spinach leaves or 3 large handfuls
1 x Packet of Cherry tomatoes
1 handful of pine nuts 
A few pieces of Basil
200g x Spaghetti Pasta
1 Block Parmesan Cheese 
2 Tbsp Extra virgin olive oil

Pepper

  [ D I R E C T I O N S ]

1. Marinate the chicken breast fillets with 2 pinches of salt and 1 pinch pepper, 
then mix, cover with glad wrap, then put in refrigerator to marinate for 1 hr. 
2. Heat 1 tbsp of olive oil in pan, then pan fry the chicken until it is fully cooked on the inside. Around 15 min. 
3. Boil a pot of water, then add 2 tsp of salt into the water, then add pasta to cook. 
Cook until al dente, drain, then drizzle 1 tbsp of extra virgin olive oil then set aside. 
4. Once the chicken is cooked, let it cool for 5 min, 
then pull apart the chicken into smaller pieces. 
5. Pan roast the tomatoes in a pan, until lightly brown or charred on the outside.
6. Put in a large bowl, pasta, then add chicken pieces.
 7. Add a generous portion of freshly made pesto , around 6 tbsp
 or until pasta is green and fully covered with pesto.
8. Add spinach leaves, cherry tomatoes, pine nuts, basil and toss!  
9. Taste it, and see whether it needs more pepper or salt .
 10. Plating - start plating the pasta by grabbing the pasta with 2 forks
 facing each other then twirl the pasta as you place it on the plate to 
create a little beautiful mountain.
11. Make sure you plate it beautifully, as presentation is everything! 
Now grate a nice amount of parmesan cheese on top, I like to use big thin slices as it looks more traditional . 
Then add a little bit more black pepper on top for garnish!
