MANGO POMELO SAGO WITH AGAR JELLY

This is my all time favourite summer dessert, it's super easy to make and its made from pure mango, and some chewy jelly goodness.
 It's refreshing and when served cold, it just goes down so well! 
Serve it in a big glass bowl or even in small portions for everyone to share, perfect for a party dessert! It's guilt free and not too filling!

  [ I N G R E D I E N T S ]

4 large ripe mangoes 
150 ml evaporated milk
1 large ripe mango [ cubed ]
sugar syrup if neccessary  ( 2 tbsp caster sugar with just enough water)
80g sago pearls
50 g pomelo 
1/4 packet Agar Agar Jelly

1. This is the different states of Agar Agar jelly. 
It comes in its original form and also in powder form. 
For today, I will use original flavour powder form. 
Just follow packet instructions or mix powder with 400ml water and bring to boil. 
Add 3 Tbsp sugar, then refrigerate. 

2. Once its set, it should look like this, then just cut into small cubes. 

3. To make fresh mango juice, blend 3 mangoes in a blender, and leave 1 mango for decoration, cut them into cubes. 
4. Add evaporated milk and blend, taste, if its not sweet enough add some sugar syrup. 

5. Boil a pot of water to boil. Add sago and simmer for about 10 minutes. 
Turn off the stove, cover the pot with lid and let the sago continue to cook on its own for about 10 minutes, until all the sago turns translucent.
 Run the cooked sago through a fine sieve and running water to remove excess starch. 

What finished sago looks like.

6, Now combine sago into the mango smoothie mixture. 
7. Chill in refrigerator. 
8. Add Mango Cubes


9. Add Agar Agar Jelly

10. Add Pomelo

Top it off with some mango! Then your done! ENJOY!
