CHINESE STYLE PORK CHOP WITH WHITE PEPPER AND SHALLOTS

This traditional chinese dish, could possibly be one of the most common Hong Kong restaurant dishes. 
Usually at those cheap street restaurants aka "Dai pai Dong" you would order this dish with minute noodles,
 or this dish with rice or even with stir fried noodles. In Macanese Culture you would have this in between 
a lovely round crispy bun called "Ju Par Bao". Great thing is even if you make it at home it's super quick and easy
, and every time seems to taste just as good as before! Every time I use to eat this dish, it would bring back
 fond memories of Hong Kong.

3 Pork chops
3 Shallots
4 Stalks of Spring onion
1 Tbsp Light Soy sauce
Pinch of sugar
2 tsp of chicken powder
2 tsp sesame oil
pinch of white pepper
Corn Starch

1. Hammer the pork chops using meat hammer with big spiked edge. Then cut a small incision on the pork edge to stop it from curling up when pan fried.
2. Slice shallots.
3. Cover pork with soy sauce, sugar, chicken powder, sesame oil and white pepper. Let it sit for minimum 15mins
4. Add 2 tsp of corn starch to the pork and mix it around, let it soak for a few minutes.
5. In another bowl, fill with corn starch ready for dipping.
6. Cover eat pork chop with corn starch.
7. Heat 2 tbsp oil in non-stick pan, then fry the pork chop until golden in colour, flipping it when necessary.
 8. Once cooked take it away from the pan, use kitchen scissors to cut it up to smaller slices.
9. On the same pan fry the shallots and spring onion for 2-3 minutes then put the pork chop pieces back into the pan, mix it around for 1 min.
10. Serve it up!!

CHINESE TRANSLATION
中式椒鹽排骨
材料: 枚頭豬扒3塊,紅蔥頭3粒,靑蔥4條,
生抽1湯匙,糖、古月粉各少許,鳮粉2茶匙,
麻油2茶匙,生粉若干。
做法:1) 豬扒略拍鬆,豬扒邊切開少許,使煎時不會捲起。
2)紅蔥頭切絲。青蔥切粒。
3)豬扒加入生抽、糖、雞粉、麻油、古月粉同醃15分鐘以上。
4)後加入粟粉2茶匙同醃,使醃料更好附在肉上。
5)另外用一碟放上些粟粉或生粉。
6)每塊豬扒在下鑊前均勻沾上粟粉。
7)開易潔鑊加油2湯匙,放入豬扒用中火煎至兩面金黃,
盛起待歇息備用。
8)同時用剪刀把每片豬扒剪開3-4塊。
9)再開鑊下紅蔥頭爆香,灑上青蔥粒,豬扒回鑊,
兜炒1分鐘,灑上一些胡椒鹽更香。
10)上桌供食。
