CHINESE WHITE RADDISH CAKE "LO PAK GO"

This is a traditional Chinese dish, most commonly eaten during Chinese New year because it has significant meaning relating to "good fortune". They also serve this dish at yum cha and can be bought at many restaurants around Chinese new year time!! The best way served is to cut thick rectangular slices of the cake then heat a non stick pan with oil, then pan fry till its crispy on both sides! Served with Hoisin sauce! You can also serve small portions by steaming it.

 2 x Big White radish, (peel and grate using the largest hole on the grater)
1 cup Corn Starch
1 cup Rice flour
3 x Dried chinese sausage
1 x long piece of dried pork
1 x small bag of dried shrimps
 1 x bag of dried Chinese mushrooms
1 tbsp chicken powder
1 1/2 tbsp sugar
 1/2 tbsp white pepper
 3 tbsp oil
1 tsp salt

 1. Steam the dried pork and chinese sausage for 10 mins. Or until soft enough to chop.

 2. Soak the dried mushrooms in water until all the mushrooms are nice and juicy

 3. Soak the dried shrimps in water for 20 mins or until moist.

 4. This should be the effect after steaming, the dried pork becomes nice and plump and moist, and it also smells really good!

 5. When you have grated the carrot, you will notice that there are alot of juice at the bottom,  drain the carrot and keep all the juices. Pour into a 1 and half cup measuring cup.

 6. Mix in 1 cup of corn starch and 1 cup of rice flour 

 7. Stir to mix

 7. Dice all the dried ingredients into small cubes, mushrooms, Chinese sausage, dried pork and shrimps.

 8. Heat a pan with a little bit of oil, then add all the dry ingredients, stir fry until the oil is out and on the pan. This oil is crucial to keep, because it provides a beautiful flavour to the carrot.
 9. Heat the pan with the oil left over from before then fry all the carrot until soft for about 15 mins on medium heat. Add chicken powder, sugar, white pepper, oil and salt.

 10. Turn the wok to low heat, pour in the flour/ starch liquid. Use a wooden spoon to stir until thick. If it is too watery then turn the heat a little higher to thicken it.
If it is too thick then add some more water to loosen it.


 11. This is the perfect consistency. When all the flour has coated the carrot and there is till a little bit of liquid surrounding the outside.

 12. Add all the stir fried ingredients and keep a little aside for the topping.

 13. Mix with wooden spoon.

 14. Pour into baking tins greased with oil. Then add left over stir fried ingredients on the top, slightly press down so it sticks.


 15. Steam for 1 hr

 16. This is what it looks like finished!

17. Add chopped spring onion on top and serve! You can serve it like this after it has been steamed, or you can place it in the fridge overnight until it hardens, and cut slices to pan fry. 
Serve with Hoisin sauce! HAPPY CHINESE NEW YEAR!

臘味蘿蔔糕

材料: 大白蘿蔔 2 個 (去皮,磨粗條)
           英粟粉 1 杯(8安士量杯)
           粘米粉 1 杯
           蘿蔔水或清水1 1/2 杯
           臘腸3條,臘肉1 條,
           蝦米1/2杯,干冬菇4-6 只
           雞粉1湯匙,糖1 1/2 湯匙,
           胡椒粉 1 湯匙,油3 湯匙,鹽1 茶匙。

做法: 1) 隔水蒸熟臘腸及臘肉,水滾後約10分鐘;
           4)   取出,切成小片。
           2)   浸干冬菇至軟,切小粒。
           3).  浸蝦米至軟,切小粒。
           5).  磨蘿蔔時留起汁1 1/2 杯或加水至此份量。
           6)7)將粘米粉及英粟粉混合,加入水份攪均勻成粉漿。
           8)   將所有切粒的材料下油鑊爆香,兜起,留下油在鑊內。
           9).  下蘿蔔絲,兜炒至略軟身,下雞粉、糖、胡椒粉、鹽及油。
          10).  熄火或收最細火,倒入粉漿在蘿蔔內,快手攪拌;
                  如太稀,用細火煮1-2分鐘至𤇍身;如太𤇍,加水開勻至適中濃𤇍。
          11). 如見粉漿完全包勻蘿蔔絲,而沒有多餘水份流出為合。
          12)13). 現在倒入已炒香之所有粒料攪勻,留下少許飾面用。
          14)倒入已掃油之糕盆內,飾上留下之粒料在糕面,略壓平,
                 使之美觀及黏牢。
          15). 燒滾半鑊水,放入蒸架,上放糕盆,水高至1/3盆邊,
                 蒸1 小時,要留意中途水乾,要加水。
          16). 蒸好後,灑上䓤粒及莞茜粒。供食!
                 可立即食用,便是軟香的蒸蘿蔔糕;如放雪櫃雪凍,
                 便可切片煎香,拌以蠔油或XO醬同吃,更添美味!
