STICKY DATE PUDDING WITH BUTTERSCOTCH SAUCE

Sticky date pudding reminds me of a cold winters and Christmas put together. I never liked christmas pudding, so as an alternative I always chose sticky date pudding instead.  This originally was a British steamed dessert consisting of a very moist sponge cake, made with finely chopped dates or prunes, covered in a toffee sauce and often served with a vanilla custard or vanilla ice-cream. My recipe is super easy to make and can be prepared in 20 mins. Its absolutely delicious and can be made 2 days in advanced and reheated.

9 tbsp unsalted butter, at room temperature plus extra for greasing
300g Pitted dates {roughly chopped }
2 tsp baking soda
2 cups flour
1 cup brown sugar
1 tsp salt
3 large eggs
1 cup water



Equipment

8 Ramekins or
Big ceramic bowl

Toffee Sauce
3/4 cup brown sugar
5 tbsp unsalted butter { cubed }
2/3 cup heavy cream
pinch of salt

1. Preheat oven to 190 degrees. Grease ramekins or ceramic bowl with butter.
2. In a small pan, simmer the dates with baking soda and 1 cup of water for 5 mins until softened.
3. Sift the flower into a mixing bowl, or into the bowl of an electric mixer, add the butter, sugar, salt and eggs and whisk with an electric mixer until well combined. Then pour in the date mixture, and stir to mix.
4. Pour into the ramekins, or bowl. Bake for 20-25 mins, or until firm to the touch. Meanwhile make the toffee sauce. Melt the sugar, butter and cream together in a pan until smooth and combined. Stir in the salt and allow to boil for a few min until thick. Serve the warm puddings with the hot toffee sauce!!

 CHINESE TRANSLATION


拖肥甜棗布甸
材料:無鹽牛油 9 湯匙(室溫)
大甜棗干 300克(略切細)
梳打食粉 2茶匙
麵粉 2 杯,蔗糖 1 杯,鹽 1 茶匙,
大雞旦 3 只。 
用具:小糕兜 8 個 或大高身糕盆 1 個。
拖肥汁材料:黃蔗糖 3/4杯,無鹽牛油 5湯匙(切粒)
厚忌廉 2/3杯,鹽少許。
做法:1)預熱烤爐190度。糕盆掃上油。
2)用小鑊放入棗干,水1杯及梳打粉,
慢火煮5分鐘至軟。
3)篩麵粉在攪盆內,放入牛油、糖、鹽及旦同打勻,
加入甜棗,再攪勻。
4)倒粉料入糕兜內,焗20-25分鐘至熟及結實。
煮拖肥汁:用小煲溶牛油、糖及忌廉攪煮至滑身,
灑下少許鹽,煮數分鐘至略,倒在旦糕上,供食
