PUFFY PANCAKE WITH CARAMELIZED BERRIES

This is such a cute dish that I discovered one night when I was craving a nice simple dessert. Once again it uses pantry ingredients, and it's so simple to make! I think this dish would be perfect for Kids dessert and is an easy dish to cook with your kids! It tastes alot like Yorkshire puddings too! You can top it with as many different types of fruit or nuts as you want! Hope you get inspired and have fun! That's what cooking is about!

Makes 6 little servings


3 Tbsp melted butter { divided }
1/2 cup all- purpose flour
1/2 cup milk
2 eggs
1/4 teaspoon salt
1 punnet strawberries  {cleaned, peeled }
Dried blueberries
2 tbsp sugar

1. Preheat oven to 200 degrees. Pour 2 tbsp melted butter into desired cake pan (above is a cupcake baking tray) , grease each tray including all the sides.
2. Combine flour, milk, eggs, 1 tbsp butter and salt in a medium bowl. Whisk for 1 minute, 
spread the batter evenly over the baking tray.



3. Bake for 20 mins or until the pancake is golden brown and puffed up onto the sides of baking tray. Remove from oven then immediately serve with berry topping.

1. In a small pan, on medium heat add all the strawberries into the pan and cook for 5 mins stirring occasionally, add sugar little at a time, until you get a syrupy consistency. Add blueberries and cook for another 2 mins, the blueberries should puff up a bit and the colour of the syrup will become darker.
Serve it on top of the pancake!

CHINESE TRANSLATION
士多啤梨鬆餅 
(6 份)
 
 材料:牛油溶液3湯匙
       麵粉1\2杯,
           牛奶1\2杯,
    旦2只,
           鹽1\4茶匙,
                                       士多啤梨1盒(去蒂,洗淨)
                   黑加侖子干適量
            糖2湯匙。
做法:1)先預熱焗爐至200度。
                                   用牛油溶液2湯匙掃均勻小旦糕焗兜。
                              2)將麵粉,旦,奶,牛油溶液1湯匙及鹽,全倒入大碗內拂打1分鈡,
                                   將麺漿平均倒入6小焗兜內。
                              3)入焗爐烤20分鐘或至鬆餅金啡黃色及鬆起至焗兜邊上,
                                   取出放上士多啤梨料便可享用。
士多啤梨料做法: 用中火燒熱小平底鑊,加入士多啤梨,攪煮5分鐘,續少加入糖,
                             攪煮至糖膠狀,加入黑加侖子煮2分鐘,黒加侖子變軟漲大少許及
                             使汁料顏色略深便成,可放鬆餅上供食。
